I’ve often read about devil’s food cake. It sounds so sinful, so tempting. Images of evilly rich lashings of dark chocolate icing smoothering dense crumbly cake come to mind each time I hear of it. So curiosity got the better of me the other day and I decided to give making one a go. I was heading to the Blue Mountains with friends for the weekend and thought  a sweet treat might be nice. Here was the result…

I adapted a Rose Levy Beranbaum recipe… I say “adapted” as I didn’t have any cognac to soak the cherries in, and I ran out of cocoa and cream when it came time to make the frosting. So I stole a Martha Stewart chocolate Swiss meringue buttercream recipe to finish it off. It was all very yummy!
